I don’t know about you, but the most difficult meal for me is lunch. I am a creature of habit and have the same breakfast each morning and dinners have always been easy – worst case I go with a meat and veggie. But lunch? Sigh… Lunch is the wildcard that I am most likely to skip, snack through or eat something less than stellar.

These 4 bean salad jars are the perfect solution for that! Not only are they a complete lunch, but the salad dressing is already in the jar. So simply shake it up, pop the top, and eat it up!

I’ve also been known to make this for dinner. I make one for each member of my family and when everyone plops down for dinner, I pass out the jars!

Most definitely! If you don’t want to use the 4 bean variety, you can mix it up and use a few single bean varieties. Whatever suits you!

Spiralize zucchini(s) into a large bowl.

You can definitely use fresh beans. One of the benefits of using the canned beans is having a built in “salad dressing”. You can always make your own as well if you want to use fresh beans.

If you are using fresh beans, make sure that they are prepared and cooked before use.

Aside from all the ingredients, you will need two additional items that you may already have!

The first is a spiralizer. I have a fancy one and a simple one. And honestly? I grab the simple one the most. Easiest to clean and move around. This spiralizer on Amazon is under $10 too!

The second is a couple of 1 pint mason jars. These jars on Amazon will do the trick! And if you already have some – great! They don’t need to be 1 pint either. You can store this in whatever size jars you want!

How Should I Store This 4 Bean Salad?

Once you are done making this salad jar recipe, you will want to close them up tight and put them in the refrigerator. Keep them nice and cold while you are waiting to eat them.

I tend to not let them sit for more than 4 days or so. I imagine they may be fine after that, but I like to eat food as fresh as possible and relatively soon after breaking “seals”.

  • 15 oz can or 16 oz jar 4 bean salad, (do not drain)
  • 12 oz cherry tomatoes, halved
  • 1 green zucchini (2 for 5 pint jars)
  • ½ yellow bell pepper (1 bell pepper for 5 pint jars), diced
  • ½ small red onion, thinly sliced
  • 2 garlic cloves, minced
